Farm Stand Pizza

Ingredients:

1 package pizza dough brought to room temperature
12 ounces whole milk ricotta
1/2 cup shredded Vermont extra sharp cheddar
5-6 ciliegine fresh mozzarella balls, torn into small pieces
2-3 slices thick cut bacon, cooked and crumbled
Fresh dill

Kernels from two ears of Jersey corn on the cob
1-2 Jersey tomatoes, sliced 1/4” thick and drained on a paper towel
Olive oil
Kosher salt
Freshly ground black pepper
Garlic powder
1 tsp fresh lemon juice
Zest of one lemon

Directions:

In a large pan, heat one tablespoon of olive oil over medium heat. Add tomato slices and cook one to two minutes each side until golden brown. Transfer to a plate. Add the corn kernels to the same pan and add additional olive oil if needed. Season with salt, pepper, and garlic (I like Kinder’s The Blend Seasoning). Sauté for two to three minutes.
Add ricotta, lemon juice, lemon zest, a handful of fresh dill, and three quarters of the corn kernels to the bowl of a food processor. Pulse until ricotta is whipped and corn is incorporated but not completely smooth.
Heat grill pan over medium-high heat and preheat oven to 450° F.* Depending on size of the your grill pan or grill, divide pizza dough in half and roll out or stretch by hand on a lightly floured surface. Brush both sides with olive oil and transfer to grill pan. Grill until dough begins to bubble, about two to three minutes, then flip and grill the other side. Transfer the grilled dough to a baking sheet and top with the ricotta mixture. Then scatter the cheddar, fresh mozzarella, remaining corn kernels, and bacon. Add the tomato slices. Bake at 450° F until cheese is bubbly. Garnish with more fresh dill.

Good to Know

If using an outdoor grill, heat grill to 450-500 F. Grill both sides of dough with grill open. Transfer to a pizza stone or baking sheet and add toppings. After adding toppings, place pizza stone or baking sheet on grill and close cover to melt cheese.
