Maple Cinnamon Blondies
Ingredients:
1 cup butter at room temperature
1/2 cup granulated sugar
3/4 cup dark brown sugar, firmly packed
2 large eggs
3 tablespoons pure maple syrup
1 1/2 tablespoons tahini
1/2 tablespoon vanilla bean paste
21/4 cups all-purpose flour
1 teaspoon cinnamon
1/2 teaspoon sea salt
1/2 teaspoon baking soda
1/3 cup chopped walnuts
1/4 cup butterscotch chips
1/4 cup mini semi-sweet chocolate chips
Directions:
Preheat the oven to 350° F. Line a 9×13 pan with parchment paper.
To the bowl of an electric mixer, add butter and sugars. Cream together till fluffy. Add the eggs, one at a time, mixing well after each addition. Add the maple syrup, tahini, and vanilla and mix to combine.
Add the salt, baking soda, and cinnamon. Add the four to the mixture in parts, combining well after each addition. Fold in the walnuts, butterscotch chips, and chocolate chips till just combined.
Transfer the batter to the prepared baking pan and spread evenly. Bake for 25-30 minutes, checking at the 25 minute mark so as not to overcook the blondies. Insert a toothpick in the center to see if it comes out clean.
Let cool completely in the pan and then cut into evenly sized pieces.
